With all the information we have about food these days, you might think choosing healthy options would be a snap. More than half of American adults report giving some thought to the healthiness of the food and drink they consume. The thing is, a lot of what we hear (or read) about nutrition can have us making choices that aren't as good for us as we think.
Take a look at our list, how many of these food facts come as a surprise?
FACT 1: Imported
produce can have higher nutrient levels than fresh produce from a farmers' market. True. The nutrient content of a food is determined by temperature, light and the soil where it has been planted. Sure transportation and storage cause some types of produce to lose some nutritional value, but studies have found that antioxidants may actually go up in other cases. This means that blueberries that are shipped over a long distances may be more nutritious than ones picked done the
street.
FACT 2: A food labeled "no trans fat" can legally contain some trans
fat. True. Get this, the government allows food makes to round down anything under 0.5 grams of trans fat to zero. So you can eat a few servings of a trans fat free food (or a few of these foods each day) and still consume measureable amounts of trans fat. Be scrupulous about checking ingredient labels and stay away from any food that has "partially hydrogenated oils". If the US FDA declares that trans fats are unsafe this may finally remove them from sweets and frozen foods.
FACT 3: Decaf coffee is not free of caffeine. True. Most coffee that's called decaf actually has some caffeine. A decaf espresso can have up to 16 mg of caffeine. A decaf latte will have about the same amount of caffeine as a can of Coke because it is typically made with two shots of espresso.
FACT 4: Canned white tuna has almost three times more mercury than
chunk light. True. That's because the species of fish used for white tuna (albacore) is larger and thus accumulates more mercury than do skipjack, the fish used for chunk light varieites of tuna. Canned salmon has less mercury than either of the two tunas.
FACT 5: Fruit juice can have more calories, more sugar than soda. True. Here's how. An 8-ounce glass of apple juice has about 115 calories, compared to 95 calories for the same size serving of Coke. A cup or grape juice has 36g of sugar, about 9g more than in the same amount of Pepsi. While sugar in fruit juice is natural, not the high fructose corn syrup, it is still sugar and therefore still has calories. Most people forget this, assuming that natural means calorie and
sugar free. It doesn't.
FACT 6: Not all fiber is equal. True. Many packaged foods have added fiber (look for inulin, maltodextrin and polydextrose on the label) but these forms haven't been proven to have the same benefits to health as the natural kind found in whole grains, fruits and veggies.

FACT 7: Cooked veggies can be more nutritious than raw. True. This does depend on the veggie, the nutrient involved and how it's cooked. We get more lycopene from cooked tomatoes than raw ones in a salad. Boiling carrots ups their levels of antioxidants (known as carotenoids) but also lowers levels of other beneficial compounds.
FACT 8: Multigrain products aren't necessarily whole grain. True. Sure multigrain appears to be the same as whole grain or even whole wheat but is not. It just means the food is made from several different grains that can be whole or refined. Look at the ingredients and watch for the first word to be "whole".
FACT 9: Adding fat to your salad can make it healthier for you. True. Eating veggies with fat can help the body absorb nutrients better. Using a dressing that has a bit of fat may make a salad with carrots and tomatoes more nutritious than using a fat free one, or skipping the dressing in the first place.
