When you think seaweed, some imagine the beach, while others mouths begin to water at the idea of a serving of sushi, surely the last thing on your mind is losing weight. A team from Newcastle University is sharing research that could change all that.

It seems that seaweed, or more precisely a fiber found in sea kelp, reduces the body's fat uptake by more than 75%, beating most anti-obesity treatments out there.

The highly encouraging findings have been presented at the American Chemical Society's spring 2010 meeting in San Francisco, a conference that brings over 17,000 scientists together and offers reports on the latest in the fields of health, food, medicine and chemistry.

The team used an artificial gut to test the effectiveness of 60 different fibers to see how they affected the digestion of fat. Alginate is a fibrous substance that becomes a gel when mixed with water. Today its used in small amounts as a thickener and stabilizer in foods. The U.K. research shows that it does have the potential to keep the body from absorbing the fat in a meal.

And since fat is the most calorie dense nutrient, this substance could help a high proportion of that fat pass harmlessly through the body.

Dr Iain Brownlee, who was a leader of the Tyneside team, explains, "This research suggests that if we can add the natural fibre to products commonly eaten daily, such as bread, biscuits and yoghurts, up to three quarters of the fat contained in that meal could simply pass through the body." The research is part of a three year project funded by the Biotechnology and Biological Sciences Research Council as they look to substantiate health claims with scientific research as set out by the European Food Safety Authority.

Adding the fiber to everyday items, like bread, shakes and other items, is part of the effort to create foods that help you lose weight just by eating them. A blind taste test, conducted by the researchers, resulted in alginate bread scoring higher for texture and richness than a regular white loaf.

"Alginates not only have great potential for weight management - adding them to food also has the added advantage of boosting overall fibre content." Brownlee explains. It is possible to add seaweed to your daily diet to get the benefits of the alginate extract. Two options known to have high levels of alginate are Wakame Seaweed and Kombu Seaweed. You can add them to soups, salads, stir-fry's and get a taste much like other vegetables.

The next step in testing the fat busting effects of the alginate will be to find volunteers and see if the remarkable results in the lab can be reproduced in people as well.

It also remains to be seen if such alginate-fortified foods would even be acceptable and practical as part of a normal diet.

Fibers like alginate work because this group of plant based carbs are able to escape digestion by the human stomach and intestines. Yet they add bulk, and help you feel full when you eat them. Super helpful for keeping digestion regular, dietary fiber has lots of benefits to the body.
