It's not just a crunchy, low calorie dash of green added to a soup, a tuna sandwich or another dish... celery is showing itself to be a fantastic health food that everyone can enjoy. Each stalk, along with the seeds and leaves, is loaded with nutrients like vitamins A, C and K, folate, potassium and molybdenum as well as a unique compound known as 3-n-butylphthalide that's been shown to enhance cognitive function in a mouse model of Alzheimer's disease. And that's just the beginning.

Celery didn't become a common part of the diet until the 1800s in Europe, the 1900s for the U.S. Two flavonoids that are a natural part of this tasty veggie, apigenin and luteolin, have been highlighted for their ability to protect against some forms of cancer. In one study appearing in the International Journal of Cancer the intake of five flavonoids in women with, and without, ovarian cancer was measured. After adjusting for other factors (tubal ligation, physical activity, duration of oral contraceptive use) the team saw that only apigenin was linked with a reduced risk of ovarian cancer, with the highest intakes associated with a drop of 21% in risk of disease. Luteolin also has powerful cancer fighting activity, especially in regards to cancers of the colon and has been seen to suppress the secretion of insulin like growth factor as well as halting the progression of disease.

As you might expect, celery has heart healthy properties as well. In a study conducted at the Ulleval University Hospital in Norway, higher vitamin C intakes brought less thickening of the carotid artery. This ensures the best possible blood flow and prevents atherosclerosis and the heart disease that comes with it.

When it comes to cholesterol, celery has some pretty impressive benefits. In research recently published in the journal Pharmacology Magazine, experts found rats fed celery seed extract each day for 2 months significantly cut triglycerides by 22%, LDL (bad) cholesterol by 27% and had a 28% rise in good, HDL cholesterol.

Celery even shows promise in lowering blood pressure. In the lab, celery seeds demonstrated potent inhibition of angiotensin converting enzyme (known as ACE) a protein that constricts blood vessels, raising blood pressure. Some new work also shows that eating more vitamin K (present in celery) can lower the risk of developing this disease.

In a study out of the Netherlands, researchers from the University Medical Center Utrecht, examined the relationship between vitamin intake and the risk of type 2 diabetes in over 38,000 Dutch men and women who were between 20 and 70 years old. The work lasted for ten years and after accounting other diabetes risks like age, waist circumference, smoking and inactivity, the team found that those with the higher intake of vitamins were almost 20% less likely to be diagnosed with type 2 diabetes compared to those who had the lowest intakes.
